快炒竿豆針
施姐姐送來一份竿豆,說是今年開春後第一茬收成,非常肥美。
我趁造早飯時有一點新鮮素料多了出來,立刻開鑊煮午飯。
竿豆約半斤(300克)洗淨,斜切成尖頭尖尾的豆針;素料有鮮冬菰、雲耳和腐皮,切片。
燒鑊下油,把所有材料一起放入鑊裡蓋好,中火燒至聞到豆香,開蓋兜幾下便可上碟。
切豆針造菜的好處是快熟,快出豆味,頭尾不到10分鐘便弄好這道菜。 09Cm.WD
Stir-fry Pole Bean needles
Ahz sent me a handful of Pole Bean, saying it is the first batch of harvest this year. They look so attractive.
As I got some left-over vegetarian ingredients from the morning, I open the wok and cook my lunch at once. ;)
Pole Bean 1/2 catty (300g); wash and cut them diagonally into needle shape with a sharp edge.
Vegetarian ingredients including fresh mushroom, fungus and bean curd sheet; cut them in pieces.
Heat wok and add oil. Put in all the ingredients and cover up. Cook with medium heat till the lovely smell come out, take off wok cover, stir-fry a few times and serve.
The good thing about cutting bean needle is it cooks fast and the smell comes out quicker. It takes less than 10 minutes to make this dish!
竿豆沙律. 暖食
中午到訪生機店,大廚Atina正在忙著造暖沙律。
南方人怕冷,雖說室內溫度暖笠笠,但在寒冷的天氣吃凍凍的沙律,總不及一碗熱騰騰的湯麵或米飯實際。
能夠把沙律的溫度把握得正合入口,既有生食的質感和好處,食物又新鮮又暖又好吃,構思果然一絕。

Pole Bean Salad (served warm)
Cut pole beans in small sections and cooked well. Add in various organic veggies just harvested from the farm this morning. Season with herbs and biogenic food like red clover and sunflower sprouts. Sprinkle a little bit of organic spirulina powder and a delicious warm salad is done!

美豆飄雪
美國豆450克(十二兩)、黑背木耳2-3塊、豆卜6個、橄欖油少許、過濾水一杯。
將所有材料洗淨。美國豆一開二,黑背木耳浸軟後,與豆卜放進攪拌機打碎備用。用油起鑊快炒美豆1分鐘,然後倒進打碎的材料及過濾水,中火焗5分鐘,加調味便可上碟。05Kl .施姐姐
Snowy Pole Bean
Pole Bean 450g (12 tael), Black fungus 2-3 pcs, Tofu puff 6 pcs, Olive oil a little, Filtered water 1 cup
Wash all ingredients. Cut pole bean in halves. Soak black fungus till soft, then blend them together with tofu puff in blender. Heat the wok with oil, stir-fry pole bean for 1 minute. Pour in the blended ingredients and filtered water, cook for 5 minutes with medium heat. Add seasonings and the dish is ready!

豆豆藜麥粥
美國豆220克(六兩)、藜麥150克(四兩)、過濾水2公升(八杯)
先將美國豆洗淨,切粒備用。藜麥跟過濾水用大火煮滾,然後以中慢火煮 30分鐘後,把美豆放進煲內同煮 10分鐘,加調味便成營養豐富的美味豆豆粥了。05Kl.施姐姐
Pole bean and quinoa porridge
Pole bean 220g, Quinoa 150g, Filtered water 2 litre
Wash pole bean and cut them into dices. Put quinoa in filtered water and bring them to a boil, then turn to medium heat and boil for 30 minutes. Afterwards, pour in pole bean to boil with quinoa for another 10 minutes, add seasonings and this delicious and healthy porridge is done!
